A long time ago, perched over 3,000 meters above sea level in the Himalayan mountains, nomadic peoples lived in harmony with an animal as robust as it is mythical: the yak.
The yak, a large ruminant with thick fur, is a pillar of Tibetan life as it provides its rich and potent milk, which shepherds have been transforming for centuries into a very hard cheese, capable of being preserved for a long time without refrigeration.
This cheese is primarily a survival food... but also a source of energy shared with their four-legged companions: the mountain dogs, faithful, hardworking and always there to protect the herds.
